Sara Valentine has struggled severely with her health since she was a very young child. Finally, at age 19, she received a few answers and remedies that helped her get through the next decade. One of these "remedies" included adopting a completely gluten-free diet. Although her symptoms diminished with this new diet, and Sara felt better, it wasn't until she was introduced to freshly-milled grain that she finally found the healing that her body was really craving.

With extreme hesitancy and caution, Sara tried homemade bread made from freshly-milled grain, and to her complete surprise, she was able to digest this bread with no negative symptoms at all. In this episode of Sue's Healthy Minutes, Sue Becker introduces us to another little seed that we will want to include in our whole foods menu - Buckwheat. But, in spite of its name, buckwheat is not related to wheat at all, nor is it even a grain.

Buckwheat, however, can be used in similar ways to grains. It can be milled into flour, boiled whole and eaten, and even enjoyed raw to add a little crunch to salads or granola.

Buckwheat flour is also an excellent choice for making pancakes, muffins, and crepes. Crepes made with buckwheat flour are less delicate, and this allows them to work very well when used as wraps and tortillas.

While in the heartland of Israel, Sue and Brad Becker helped harvest grapes and plant trees alongside 25 other volunteers. Sue also shared, with a group at Hayovel, the nutritional benefits of real bread made from freshly-milled whole grains.

After recovering from being very sick for the first few days, Sue was able to share the history of white flour and the common diseases that soon followed that are directly related to commercial flour. She made bread and muffins with the kitchen staff of Hayovel, and the staff immediately embraced making all bread from the freshly-milled grain.

Many years ago, Sue Becker had the wonderful privilege of ministering at a women's shelter in downtown Atlanta. Even though this event encouraged her in many ways spiritually, it also lead her to question her calling for sharing the goodness that freshly-milled grain has on our physical bodies.

As she prayed for God to confirm the new calling she felt on her life, He actually surprised her by showing that she was already doing exactly what he was desiring for her and what He had already called her to do. That early morning call came with an excited customer who had been working for years, with no luck, to lower her high cholesterol levels. However, with only one month of eating real bread - made from freshly-milled grain - her cholesterol level had already dropped 85 points!
